I've taken my pads off my front brake caliper to check them but now I can't seem to get them back on because the caliper is stuck out. How do I cause it to retract a bit so I can fit it back on the disc?

Slowly and carefully with a C-clamp.

after reinstalling it check and make sure there isn't a cause for it to be stuck out or staying applied. it should push back without opening the bleeder, at least some anyway.

No. You don't have to bleed them to push the piston back in.
