running strait pipes is bad on the piston rings(no back pressure). as good as condition as the bike is in i would advise to polish it up a bit and sell it to make a profit or ride as is.

Don't sell the mufflers till you ride around for a couple of hours with them off...:)

Running the bike with straight pipes wont hurt the engine due to a lack of backpressure. That is a myth. On a 4 stroke engine you really dont want back pressure anyways, you want exhaust scavenging. As long as you keep the stock collector box you will retain most of the scavenging effect.

The main problem is going to be running the engine lean. These bikes run pretty lean in stock form and by removing the mufflers you will make it much worse. Lean=heat and detonation and both of those are bad for our air cooled engines. The bike wont run the same after you modify the exhaust, you will lose quite a bit of bottom end power. You can rejet the carbs to try and richen the mixtures up a bit but it can be difficult even for carb pro's. There is much trial and error involved as well.

Backpressure would be needed if you stuck a 2 stroke engine on your bike. On 4 strokes it is an undesired effect. You arent going to hurt the engine unless you run it seriously lean or run it with no exhaust whatsoever. Running with no exhaust is an easy way to warp exhaust valves but the stock headers are lon enough you dont have to worry about any of that happening.

Where are the bikes like this in Kentucky? I've not seen a Maxim under $1500 ever and am always looking on Craigslist.

Agreed with some of the others. That bike is too nice to chop.
