do you have to keep any of the relays, or do you eliminate all of them?

Thats bit of a broad questions.
What make and model do you have and what relays are you talking about?
I would not personally get rid of relays.

I have an 81 Xj650. I am doing a rigid frame bobber project on it. What is the bare minimun wiring that I can get away with?

I have been modifying my wiring with all new terminals, and editing some of the junk out.

I decided to keep the relay for the neutral gear switch, and I went out of the way to add a relay for the headlights. This was for 2 reasons, to prevent switch failure and because I will be running dominator lights.

Relays are not there to make life complicated, they are to remove current draw from the switches.

When creating a custom wiring diagram, you have to decide what you want on your bike before you start running wires. Think of it this way. When you wire a house for plugs, switches, lights, etc. You don't run a bunch of wires to each room and then come in after the drywall is hung and decide what and where to put things. You decide that beforehand, hang the boxes, and then run your circuits. Same thing with a bike, car, whatever.

Make a list of what you want on your bike: turn signals, brake light, license plate light, dimmer switch, etc. Then build your harness to power whatever components you've chosen.

Also It was easier (for me) to wire everything from the fuse box out. When I wired my xs I had a lot of mess and frustration trying trying to get everything to hook into the fuse block. My actual digram doesn't look like this one but used as a base for what I needed. Like gamaru said make a list of things, and then I re drew my own diagram it helped me get it down before doing the work on the bike.
