The safest way would be to let them follow you in a car, or to hold all the cash.

I agree cash on hand first, then let them take the test ride

Have him follow you to a School parking lot.
Let him ride the Bike in the confines of the parking lot.

Make sure you both are in complete agreement about damages.
Having a Legal form for him to sign and YOU leave in a safe place will discourage any horsing around.

A Boiler-plate Promissory Note filled-out and signed for the Value of the Bike, and the Registration to his car, both folded and placed in an envelope for you to hold is not unreasonable if you are handing him the keys and letting him take the Bike.

as long as I have my $3500 CASH deposit, they can go ahead.

In fact, I would be happy to RENT my '81, $100/day, as long as I have said deposit.

As for TAKING a test ride, showing up on a bike 10X nicer than what's being sold often helps.

Most UK sellers - especially on ebay - ask for what ever the agreed price in cash up front. Also PROOF of insurance (Very important if you don't want to have your collar felt by the boys in blue!)

Cash amount you want for the bike in your hand.
The agreement is "Any damage including scratches and you just
    bought it"
Providing the bike is in perfect shape and even small blemishes
    wil reduce the asking price.

I think a cash deposit greater than the value of the bike is plenty.

    Has a deterrent effect.

Then again, I've only sold a few bikes in my life, and none of the buyers got a test ride.

"Hey, Man. I'm here to, like, take a far-out test ride on the old Yamaha-900 you have in the paper."

"You need a Permission Slip signed by Helen Waite."

"I ain't got one, dude. So, like, what do I do now?"

"Looks like you got to go to Helen Waite!!!"

While a complete stranger is riding the bike? No thanks!
+1 for having the cash in hand and with the understanding "you break it, you buy it"

shouldnt be a problem with your training wheels and that shut off switch attached to the chord they use when you ride
