The bike starts up fine. Warms up fine. And idles fine.

One of the carb intake boots keeps slipping off the carburetor from vibration. Those clamps are pretty much shot after all these years. So I know that I have an air leak and that it may contribute to this. But what else might cause this problem?

I release the clutch and start moving forward, it almost dies, but if I do it just right it'll keep going. When I try and give it some gas, it goes, but definitely not like it should be. It feels like its kind of sputtering and struggling from like 2 to 4 grand and then it just kind of "catches" and takes off on me. And I have no problem running it for any length of time as long as she's about at 5 grand.

My first thought is one of the jets in the carb? I can't remember which one controls the first bit of acceleration there. But I just cleaned my carbs REALLY WELL. I followed the whole 9 yards and everything. Spent extra time on the jets. And I have an inline filter in place.

Maybe I should run some SEAFOAM through it? Or do I just need to go "The Whole 9 yards" again?

Have you done ALL of the following, IN ORDER?

-checked valves and adjusted if necessary?
    -bench sync?
-float levels checked using fuel and the "clear tube method?"
    -running vac sync?

Of course, if you have a vacuum leak, then none of the above will do any good until it's fixed.

The boot that keeps losing its clamp: is it carb-to-motor, or carb-to-airbox? If it's carb-to-airbox, it's the boot itself trust me on this one.

    Ok...

I have done the bench sync.
I have done the fuel levels.

I haven't run it much yet because I don't know the situation on the valve clearances. Thats my next project. After I do valve clearances, then I was planning on doing the vac sync.

Could the adjustment between the carburetors have this effect on performance?

And it is the carb to airbox boot. 3 out of the 4 clamped down all the way with new clamps, but the one is just not staying on.

    Most certainly.

And the other issue is the boot itself; they shrink and after time will absolutely not stay on. And what's really goofy is only one or two will do it.
