This has probably been answered a million times, tried a search but thought this easier. Anyways the big screw/adjuster on the bottom between the 2 center carbs....What is it? What does it adjust? and how do I know if it's where it should be?

Its the idle speed adjustment. Your bike should idle around 1000 rpm. Are you having any issues? Or is everything OK?

Get your bike nice and warm. Go for a good ride. Then adjust till the rpm is set. Mlew says 1000 and I definitely don't know. Good luck. Be sure to check those valve specs!!!

Ok..I can't get a decent idle without the choke on..even after it's warm. I know the carbs could use a cleaning. I didn't think they're terrible but it isn't getting any better by itself.

If you have to use choke AFTER it's thoroughly warmed up, your carbs ARE terrible. Get to cleaning :) you may need throttle shaft seals as well.

Have you checked for air leaks in the intake/carbs?

Once again, start with a valve clearance check; you won't be able to make the final adjustments to the carbs if the valves aren't in spec.

Listen to Fitz. Hey Fitz you should talk to SnoSherrif about making folks read about getting their valves in spec before joining this site. LOL JK But seriously no one ever wants to hear it, and they always need to do it.
