O.k, had 2 air mixture screws that had sheared heads. These are the mixture screws on the top of the Hitachi carbs. For my purposes i will call them pilot screws. So I decide the only route is to EZ out the screws. Get the smallest EZ out I can find, 1/8", then drill the pilot screw to fit. I got the screw extracted, at least the part with the threads. The rest of the screw along with the spring and the seals is still in the carb body. I am however able to adjust it so the bike will idle fairly well. What I need is a source for these unobtanium parts. Sudco no go, other carb parts sources, nada, bid on a set of 750 carbs off eBay, as a backup plan, but would prefer to keep the carbs I have now. On another tack, how accurate is the tachometer on our bikes. If I adjust the idle to below 1200 or so rpm's, by the tach needle, the bike feels like it is laboring and the take off is sloppy. If I raise the idle between 1200 and 1400, again by the tach needle, the bike launches beautifully, idles great , etcetera. So what doya think. I have the carbs synced close, the pilots are close, even with the stripped pilot screw, so just need to get a set of pilot screws. Any leads will be appreciated.

OEM Yamaha parts. Maybe they are available there? Mine are for my 86 X, altho the screw assemblies are $13 each.

Got my replacement Hitachi pilot screws from motorcyclecarbs.com, but they're not cheap -- ~$30/screw. It would've been cheaper to get a new carb for parts, but I couldn't find one anywhere, and got desperate. At a certain point, it's better to just spend the money so you can ride.

losifer, I have a spare set of 650 carbs that I had bought for my XJ (spare parts, ya know). I sold the bike and no longer need the carbs. Other than needing to be cleaned up a bit more, the only thing wrong with them is that the posts that the floats are mounted to in one carb have broken off (like that when I got them). If you are interested in a spare set, let me know. I could probably let them go for about 75 plus shipping, just to get them off my workbench.
