Is there a trick to getting this seal out? I imagined it would pull out with the pivot axle shaft, but it won't give way. Has anyone had to cut the seal up to remove it? Or should I try to pry the shaft out somehow?

Look on the inside of the cover. At the bottom of the shaft there is an E-clip. Remove it. Then you can remove the shaft (the pinion gear will come free of the shaft). Then you can remove the oil seal (careful to not damage the bearing). Then you can drive in the new seal and out it back together.

Thanks k-moe. I had removed the e-clip from the bottom. The pinion gear is actually cut into the shaft. The seal was just really stuck. There's no separate bearing to speak of, but I certainly didn't want to gouge up the surfaces.

I ended up bolting the clutch cover down to my workbench, reattaching the pull arm on the top, and prying the shaft out with a piece of wood behind my pry bar. Reenactment below (the seal is already out in this pic):

Then I used a seal puller to pry out what was left of the seal. I had cut the inner half of the seal out before I removed the shaft.

I did not realise that there was so much of a difference between the 555 and 750 clutch cover.
