    ...how come more moto manufacturers don't use brushless alternators, ie. windings on the stator and magnets on the rotor?

    Don't know for sure - but some guesses:

    1) Permanent magnets are expensive

    2) They can lose their magnetism (heat and vibration)

    3) Voltage regulator works by controlling the field on the rotor.

    Cost on both ends.

    Expensive to offer driving-up prices (Unit cost of manufacturing)
    Expensive to fix driving-up repair costs (Reliability and ease of servicing Brush Units)
    Sensitivity to vibration, heat and cold.
