Runs great, however when cruising at about 65-75mph or 5000 rpms starts cutting out. Any suggestions? Faint smell of gas in exhaust like may be running rich.

can you power through it, or does it die?

I'm thinking maybe it's the float levels. You can check them easily enough on the bike with a clear length of tube with the bike on the center stand.

Im doing the same thing, bike runs good, 6000+ it starts cutting out. Missing bad. Was going to do the valve clearances first before carbs but idk if just an adjustment may even help to keep me riding thru summer. Can't order shims till I have specs and trying not to have major down time

Sometimes you can get away with swapping shims around , when I did mine last I bought 3 from my local Yamaha dealer paid 9.00$ each the rest swapped around .
