    Gentlemen,

I am a beginner rider, was working on my xj700 Maxim x for couple month. Today, took it for a little spin and the engine exploded.
    Parting it out

    So that’s that...

How do you know the engine exploded? Did you disassemble ? Perhaps you could find donor engine. Plenty of wisdom and experience on this forum.

Probably will be something simple that caused it to break down.

That is part of the reason that I ask. I got my bike and the po hadn’t had it running for over 10 years and they ultimately thought it had major engine problems; just just not breathing right; btw had 15,000 ish miles when I got it. Take a couple of guesses on why it may not have been running right.

I was riding at maybe 30 mph with my girlfriend in the back, all of a sudden pieces fly out from the right side of the bike and shoot in all directions. Leg covered in oil, shrapnel tore jeans slightly.. Swapping the engine is too expensive in my situation, and i think it would be wiser to part it out now... Very depressed. Loved that bike and put a lot of hours and money into it..

Not enough obviously -(I meant love not money)
Take a step back, have a long hard look at the clutch casing. It's obviously made a bid for freedom.
As long as the main cases haven't been broken you may be in a cheap rebuild situation - clutch, casing, used prices...
A pic might help someone help you - had you been working on that side of the engine?
