I just bought a 1982 XJ750 with 4300 miles on it. It's been stored inside (since 1994) and is pretty good shape. No major rat's nests or any wires chewed by them. A couple of big bug nests but that is it. On the list of things to do is a new battery. My question is: what the hell is the little probe in the battery? Do I have to get a battery that has this feature or can I get one and defeat/de-wire the probe. Is it easy to defeat? Is this a low acid level detector? Help is appreciated.

That is the battery level sensor to the Atari . I would recommend spending the extra money for an AGM battery these are sealed batteries, you can bypass the level sensor with two resistors soldered in line with the wire to the battery.
