I have a 1982 maxim 750 and recently got it to turn over so I cleaned the carbs and flushed the tank and it goes to about 3k rpm for a second or two then immediately drops and dies, does anyone have any clue what this could be?

Sounds like its losing spark or fuel, you will have find that out first.

i have checked sparked and it seems fine and it’s getting fuel I believe because it does it consistently after it gets a little warm

It's a possibility that you have a vacuum leak. How do the intake rubbers look like? Are they cracked? You could take a can of brake cleaner or something and spray them when you start it. If the RPMs change, you have a leak. When you cleaned the carbs, did you take out the pilot jets and make sure they are clean? They are really small, so a little gunk or whatever in the pilot jets will plug them and then the engine won't idle.

To check spark WHILE its running you will need a inline spark tester, at night is best. Does it help to choke it when it starting to die? or When it starting to die squirt gas in carbs, but do it outside with F extinguisher close.

Those neon inline testers are brilliant, 30 second test.
