The front fork assembly on my latest resurrection (XJ750) is completely stuffed. I have the chance to pick up a complete (including brakes and master cylinder) front end from a 1981 XV750. My question is will it fit?

although i can't answer your question with any cirtainty, are you going to use the triple tree from the xv, or swop the fork legs into the xj triple tree. if using the xv triple tree, it may just be a question of obtaining the correct size bearings to suit the frame and triple tree, if swoping the legs, can you measure both sets of legs to see of they fit .
have you considered the xv only has a single disc up front ,the xj has twin discs with quite a bit more power from the engine than the xv?

From the parts catalog, they look pretty different.

Most notably, XV only has a single caliper and of course XJ750RH has the anti-dive units.
