When I get on it, the bike jumps out of first gear and goes into a false neutral. Only happens in first.
Is that my transmission going or something relatively simple? (simple=without pulling the engine out)

Remove the shifter cover and inspect the position of the springs. Inspect and adjust the clutch cable. Have you rebuilt the clutch?

EBC clutch and springs. Doesn't slip at all, this is totally jumping out of gear and into neutral until I shift to 2nd.

Delicate... Pull that clutch at the right RPM and you'll push the gears into the right position if you pull up hard enough.
    It's an art.
I have found a neutral between 2nd and 3rd... when I'm being gentle.

    on the other hand...
I have seen bent shift forks and ground down shift forks, both of which will cause the same issue.
Let alone rounded off dogs, or oil choice.

If it always jumps out of gear then it is probably bent or ground down shift forks with rounded off dogs.

    Ouch... sorry didn't help!

The truth helps. I was hoping it wouldn't be the shift forks.

    What does that mean, fix-it-wise?

The forks and dogs are in the case.
    Do this first...

Is this the same case that the starter clutch is in? Because that needs fixing as well.

Jumping out of second gear must be the most common fault as it gets hammered the hardest, rpm wise and shift wise.
Yes it is the same issue, generally but putting a flush through, changing the oil and altering your change technique (don't hammer 2nd gear and gently go through it and then hammer 3rd) can be a way around it also.
    For awhile at least.
