What's the recommended clear coat (brand) to put back on for durability against yellowing right away ?

What grit of paper reproduces the factory "brushed" finish?

I kept the clear coat off, it only turns yellow again. Once in a while just polish it with Mothers.
With the factory brushed finish, you can start off with 400, then 800 and up. And when you finally get it all off, Jewelers rouge (I used the white one) to buff it with.
That brushed factory finish, is sometimes better just lightly sanded. Lot of work to get it to shine like mirror.
