Is it a big job to replace the seal?

Other than removing the swing-arm, flange and old seal?

That depends. There are 4 oil seals, and 3 o- rings in the final drive. The input side requires the use of a special tool to set gear backlash (the tool can be shop-made). The driveshaft seal is easy (but if gear oil is coming from there then the input seal and o-ring will need replaced too). The output sid seal and o-ring are easier in that the ring gear spacing is set via shims instead of a threaded retainer.
    Where is the leak?

Does anyone know of any forums or write-up for replacements of these seals? I have a tool made and turned out the ring exposing the oil ring, but I know there is another oil seal behind it and was looking for something to follow along with before fully blindly jumping in. And of course the Hayes book doesn't go much beyond an exploded view of the final drive.

The FSM (factory service manual) has a pretty through section on the rear gear including disassembly/reassembly, if you don't have a copy PM and we'll see about getting you one.
