I have a 1982 750 Maxim, the book calls for leaded gas, but will the valves be fine with unleaded, or do I need insteado'lead, or a similar product?

Any low-test unleaded you have locally available will be perfect for her.
Leaded gas was being phased out when she was new, but was still commonly available (though of a much lower lead content than could be found prior to 1980). There's no catalytic converter, so the lead content was not an issue (which is why Yamaha could call for leaded gas), but the engine was built with hardened valve seats to run on unleaded.

I sure didn't, I saw @Stumplifter reply and thought maybe he was hitting the bourbon while surfing!
