All along I've thought I had an '83 xj750k, that's what the title says. And I know from messing with the wiring and electric components are set up like a K. But when I started to open up the front forks, I have the "J" style adjustable dampers. So I ran the VIN and it came back as an MK. I'm awfully confused, any insights? Could the previous owner have put J forks instead?

The K and MK according to Haynes are supposed to have forks similar to the XJ650J without adjustable damping.

I suppose it's possible somebody retrofitted 750J forks after an accident... Or maybe Yamaha used what they had in the parts bins to get early MK's off the production line?

By the way, it seems to suggest in Haynes that the K was just a normal maxim and the MK was a midnight version with black/gold finish (chassis start 22R100101 as opposed to the normal max which was 22R000101)

Welcome & congrats you may have a Midnight Max! :D (maybe if it's not got the colour scheme that was replaced at the same time as the front end repair)

To clear up a bit of confusion.

Both the '83 750 Maxim (K), and 750 Maxim (MK) had the ID number 22R.
To clearly ID the difference between the Maxim, and Midnight Maxim you need to look at the last 6 digits of the VIN (Individual Serial Number).
    The Maxim started at 000101
The Midnight Maxim started at 100101 (Note the 1 at the begining).
The Midnight Maxim was essentially a trim package added to the standard Maxim model.

The Maxim would be black, or red with natural aluminum trim. Gray engine, and forks. Black accent wheels. Chrome exhaust.
The Midnight Maxim would be the Black with gold trim package. Black engine, forks, and exhaust. Gold accent wheels.

The '82 750 Maxim (J) used the adjustable dampening forks with a cap held on with a screw that had the numbers 1-5 printed on it. These forks also used the air crossover, and air joints below the top crown.

The 83 750 Maxim, Midnight Maxim (K,MK) use independent air adjustable forks with caps that had AIR ADJUSTABLE molded into them the screwed into the top of the forks.

If you have the adjustable dampening J forks. It is highly likely that they were swapped in at some point (accident, modification). This should cause no problems, but should not be used to ID the bike.
