I am in the process of adjusting my valve clearances and I have decided to remove the cams since 6 out of the 8 valves are way out of spec.

How do I remove the cams and replace them without messing up anything?

Also while I am in there I want to see if the cams are in good condition. what am I looking for? what do I need to measure?

Do yourself a favor and either get a shim tool or use something to capture the valve open (Large wire tie, piece of wire etc). Pulling the cams is too much trouble for doing valve shims.

As far as checking the cams for wear: The surfaces of the lobes should "look" new. No pits, no gouges, no discoloration.

Energi2er, it sounds like you don't have a manual on your bike.
First and best investment you will ever make in your machine.
It pays for itself first time you use it. I'll also back up MiCarl, pulling the
cams to shim the bike is just a lot of extra work. Use a ZipTie to wedge the valve open or purchase the handy dandy tool.
Chacal stocks everything you need at a very reasonable cost, including the book.
