So I've moved this past week from Chico, CA where I was attending Community College to San Diego for a job opportunity

now I have never ridden my Bike on a 5 lane Freeway so this past past week was a good learning experience and to see the different types of driving styles.

regular speed here is 80 Ive been pushing my 750

I went from Coronado (75) freeway to Imperial with some crotch rocket Marine guy and I hit 5th gear 9,000 rpms to keep up with his 650 Kawasaki Ninja

My speedo doesn't work(cable keeps breaking so ill take apart the gear housing for it on the wheel see whats up) so that's first on my list
I also am going to do a Shim job some people recommended calling around seeing if someone would do it for a little cash or free

my front left fork is leaking, I just purchased seals and dust covers, waiting for them to come. (i have no Idea how to change them, but I have a manual now so I'll try my best, getting progressive springs is to pricy right now)

my clutch cable snapped while I was adjusting the it at the handle, its kinda hard to adjust since my first gear fork is bent and likes to slip out into neutral. i guess its a good thing since now its like a safety thing, cant rev to hard in first.

anything else I should be doing?

I am limited on tools since the swap and living in a studio makes things harder so right now pulling the engine and splitting the case will be out of the question, plus costs.. I wish Chacal would set up a payment plan =P

The shim job is about a 2 out of 10 on the difficulty scale. All the tools you need is a set of feeler guages, a couple of metric wrenches, your 5.5 mm allen key and some valve gasket sealer. Follow the instructions on the airhead valve clearance thread and you're good to go. I just did mine without any problems. I didn't have the valve bucket holding tool so I just used a piece of 110 volt electrical cord to hold the valve open - worked fine. Just don't over torqe the valve cover allen bolts!

too late on the over torquing, I was replacing the valve cover gasket a couple months back and learned my lesson, snapped one of the bolts( left side, second one from the front. haven't done anything with it yet since it doesn't leak lol

Yikes! You need to slow down! A handful of throttle can get you into a lot of trouble quick, ESPECIALLY if your bike isn't in top shape. Add to that, if the SDPD or CHP pick you up for speeding, you think you are poor now... (I got both of my tickets in SD!).
First, one of the best tools you have is the book, use it.
Second, use the search function on this site to look up the processes you need to perform and learn how to do them correctly without any of the mistakes others have made. This will save you money and time.
Third, the anti-dive system cannot be removed without the fork oil draining out. If you are replacing the fork seals, this is not a problem and hopefully you have already drained most of the oil.
It feels like you are trying to rush into this without all the requisite tools, you can rent tools from most auto supply chains.
Pity you didn't stop by (I'm an hour off of the 5) on your way down, I would have been happy to help out. I've got all the toys to do the valve check and adjustment as well as the carb sync.

9000 rmp's at what speed? That's awful high for 70-80 mph speeds I would think on a 750........You might tell your buddy that his ass needs to slow down! :)

Not a math wiz, but my 550 is only at 7k doing 80, so I would think the 750 would have to be doing a 100 to be at 9k, hell, maybe 120. Can someone with a 750 chime in? :) Either way, ride on, be safe, and tell your marine friend that you are the leader, based on seniority and time in service of the bikes, lol.

Well I had some tools, and I have indeed drained the fork oil, there was about 16 ounces out of both

I have a trailer I used to tow the bike down from chico so maybe I will take up that offer if you have some free time in the following weeks

Macros, don't forget the 18" rear wheel we've got. redline in 5th = 120mph. I've had mine past that. Since the speedo pegs at 85 i find tach arithmetic to calculate current speed to be a soothing exercise. Takes your mind off those bolts you may have forgotten to tighten.

Two weeks notice is usually all I need (gotta keep mommy in the loop). When you are ready, drop me a line.
