So I just finished the 2nd gear fix and I'm putting everything back together and these stubborn oil filler caps stripped out on me. I let PB blaster stay on them for a good 3 hours and they still wouldn't budge.... So I'm wondering how I'm supposed to get these things off!?!? And is there a possible way of filling it up with out removing them? Haha might be a silly question.

    Thanks for the insight!

There's only 1 oil filler cap on the engine, on the top of the clutch cover.

Remind everyone that you are working on an XJ1100 (it's got quite a lot that's different about it compared to the other shaft-driven XJs). Putting that in your signature is helpful.

You've tried penetrating oil, now try a bit of heat.

Throw away the old plug and replace it. They are a standard 14mm thread. You can get them with hex heads so they are easier to remove. The OEM plug with the allen socket are a PITA.
The rear diff uses the same plug, get one for it also.
