After 30+ years on the bike it's time to replace the cable, and i don't have a clue on how to do it?

I replaced the speedometer cable on my 82 XJ750 and it was a piece of cake. If the 550 is the same, you have the knurled nut by the instrument panel and a small bolt by the wheel. Take the old cable off, put some motor oil down the new cable to lube it (there are different ways, but I found this easiest). Put the tire end in first, run the cable back to the instrument panel, and secure it with the knurled nut. Again, this is on a 750, but I would think it is similar on a 550.

yup thats how but you may want to use cable lube or lithium spray to lube cable.
the cable can be removed to spray down inside the casing
one or the other end may be snaped off in tach or hub from old cable.
when installing in hub you may have to turn inner cable to get it to slide in and aline with hub .
also may have to slowly spin/turn wheel to get it to aline with speedo.
