Just curious if anyone has or knows of an example of an '85-'86 XJ700 that has the handlebars swapped out with the more leaned back handlebars from the XJ1100.

Leaned back? Like the older "buckhorn" style? Can't say as I have, at least not on an '85/86, but there are a few people with older model bikes that have installed apehangers. (Gorgeous bike HERE) Most people are going for the more aggressive drag-style flat bars or clubmans.

Leaned back should be pretty easy as there wouldn't be any tank clearance issues, but you might need longer clutch/throttle cables and brakelines.
