I've managed to strip the thread on one of the bolt holes that is used to mount the rear brake caliper onto the bike (see picture attached for the thread I'm referring to). I'm thinking I can get a longer bolt and put a nut on the other end instead to replacing the entire caliper. Has anyone else done this before? I'd have to grind one side of the nut to make it fit.

You probably could put a bolt and nut on there but I don't think you would like the way it looked. A better idea all around would be to put a Heli-coil or Timesert threaded insert in. That should permanently repair the threads. If you don't want to do it yourself a local machine shop should be able to do it for a reasonable price. That would have a much better appearance too.
