Will the 550 gauges work on the 750s, if both are maxims?

Not without wiring changes on the 750.
What wiring changes will depend on what year 750.
You will need to add an electric tach to the 550 gauge cluster, since the 550 tach is cable driven.

    Short answer: not easily.

Hmmm, I've got an 82 750 maxim. Looking for some relatively cheap gauges that aren't huge. Completely open to suggestions

Convert to xj650 maxim just no fuel gauge. 83 750 uses xj650 setup.

Wiring will still need to be done though.

This is the Seca link. The maxim wiring is a tad different, but I can't find the link for that.
A wiring diagram will clue you in to the differences though.

Sorry, pretty new to all this. How about running LEDs for blinker and head light? Do I need anything in the wiring for that?

You can run LED's but realize:

Turnsignals will need to have resistors of one sort or another to trigger the flasher

Headlights may have ballasts---ballasts have size and create heat....your room inside the bucket is limited
