I am rebuilding my Hitachi carburetors and in "The Church of Clean", the emulsion tubes need to be cleaned. How do you remove these tubes from the carb body? Thanks ahead of time for your help here.

They are held in place by the main fuel jet. If you've got the main removed, you should be able to (carefully) get it out.

What would you recommend I use to get it out?

So I knock it out from the open top of the carb, correct?

No, it comes out the top! You have to tap on it from the bottom (where the main jet was screwed into it) and push it thru into/through the carb throat.
