Update! Boiling the carbs worked wonders! I also rigged up my own ultrasonic cleaner with my hand sander and a bucket suspende in the air. I tinkered with the float tangs a little and now the levels are holding perfect. One tang had a slight bend in the middle and that was making the needle drag on the seat walls. The bike fired right up at about two turns out on the air mixture screw. She sounds amazing!! But the exhaust pipes started smoking, I thought maybe I had just got oil on them from the oil change a couple weeks ago. Then the motor even started to look like it was smoking so I killed it. This only took about 40 seconds to happen! I noticed small trash blowing out of the muffler. Could there be trash clogging the pipes? Would that make the bike run hot that fast?

I noticed I had my idle knob only 1 turn from being all the way in! The rpms were hanging around 1200-1400 idle. Should I adjust the idle knob and mixture screw to get my idle knob backed out or is it normal to have the knob ran in that far for the proper idle? In other words do those adjustments work together to get a proper idle or is the air mixture screw only effecting the acceleration?

Not trying to butt in... but generally, if the float sits level with the float bowl Mounting surface, either flat bottom float or casting mark/seam on float, with the carb inverted the level is good, worst case set the float slightly off level, towards where the bowl will be fitted, it genearllay works for any carb.
Requires a "mechanics eye" but can be done.
    Hope this helps. ;)

Idle shouldn't be that far in, your flooding or simply over adjusted on idle

Sounds like mice in the mufflers---

Sounds like an oil drop is burning off

    Sounds like condensation burning out

Al basically normal, but is because of sitting and/or neglect that you'll need to continue addressing
