Are lead acid the best for these bikes or could I use a gel or lithium? I can't find a battery locally and will be ordering online.

Gel works great. A lithium battery with an onboard charging monitor works too, but I don't find them worth the cost for my situaton.

gel batteries are lead acid as far as your bike knows, it don't care. the basic difference is lead acid is filled with liquid, gel is filled with jell-o. lead acid needs to have water added sometimes gel is maintenance free.
lithium is smaller and lighter and costs more and depends on a circuit board in it to work.
right now your bang for the buck is gel
