    Recently acquired a 1985 XJ700 Maxim X with the Mikuni carbs in a box. I'm under the impression that new/different Carbs will be necessary and obviously I'm having a difficult time finding them. Any info or leads pointing in the right direction would be greatly appreciated.

    What leads you to believe this is true? If the carb set is somewhat complete, they can be rebuilt (either by yourself of resident rebuilder hogfiddles).
